Brinjal rice or Vangibath Recipe Ingredients

Use the following ingredients to prepare or make Brinjal rice or Vangibath recipe at home.

Brinjal rice or Vangibath Recipe

Rice 1/2 cup
Brinjal pieces - 1 cup
Vangibath masala powder 1 spoon
Curry leaves - 10
Oil - 1 tablespoon
Mustard seeds (avalu) - 1/2 teaspoon
Urid dal - 1/2 teaspoon
Turmeric powder - pinch
Salt - to taste

Brinjal rice or Vangibath Recipe Making Procedure
  1. Cook the rice in a rice cooker or pressure cooker.
  2. Heat the oil in a pan and add mustard seeds, urid dal, turmeric and curry leaves. Let them pop.
  3. Now add the brinjal pieces and fry them.
  4. When the pieces become smooth add vangibath masala powder and salt to it and mix well.
  5. Finally add the cooked rice and mix well.
  6. Serve this brinjal rice or vangibath hot.
